Summer Vegetables & Pasta Salad

Marie's Summer vegetables and Pasta salad is quick to prepare and very healthy. It is a great organic food recipe because all the ingredients are available as organic produce and will really bring out that special organic taste.
The recipe:
Serves 2 - My recipe takes only 10 minutes to prepare and 10 to 20 minutes to cook depending on the type of Pasta you use.
You will need:
* Butter
* 1 Courgette - sliced
* 1 Small Aubergine - thinly sliced
* 6 Cherry Tomatoes
* 1 Red Pepper - deseeded and sliced into thick
chunks
* Pasta
Place all the vegetables under a pre-heated grill or in a griddle pan and drizzle with butter. Cook for 10 minutes.
Cook the pasta according to the instructions. Wholemeal pasta is healthier and that is what I usually use.
Once the vegetables and pasta are cooked, mix them together and serve.
This is a quick and easy meal to make, and is healthy and Yummy!! This way my children get to eat some vegetables!
