Tomato Spaghetti

Hi,
I would like to thank Ann for trying my recipe.
It's so easy today to just place something ready made in the oven. But it can be just as quick to make something from fresh.
Not only is this healthier (especially when using organic produce) but also there is a sense of achievement as well.
Here's another quick and simple one!
Tomato Spaghetti
5 tomatoes (or cheat with a can)
400g spaghetti
36 leaves fresh basil
3 cloves garlic
100g parmesan cheese
5 tablespoons olive oil
Salt & pepper
Boil and peel tomatoes, remove the seeds then dice. (heat up tinned tomatoes in a pan). Salt, then leave to strain for 15 minutes in a sieve.
Meanwhile, rinse and dry the basil. Then peel and crush the garlic.
Grate the parmesan into a bowl, add tomatoes and mix together with basil and garlic. Add olive oil little by little, stirring constantly.
Season.
Cook pasta as directed on the packet. When cooked mix the pasta and sauce together.
Serve hot! and top with extra parmesan to your preference.
